Sweet-tart quince is a culinary treasure

Quince is a fruit similar in appearance to a pear, but more tart. We've rounded up our favorite quince recipes.

Similar to applesauce served with pork, this recipe, adapted from chef Stuart Bell of Ten Minutes by Tractor restaurant in Mornington Peninsula, Australia, uses sweet, spiced quince to balance faintly gamy venison loin served atop a creamy shallot sauce.
This sweet, tart fruit pie is a beautiful showcase for the flavors of fall and winter. It's great on a holiday table, and is at its best when served alongside a plate of cheese: the rich quince flavor balances beautifully with a wedge of funky, crumbly blue beside it on the plate.
