  • 1 tsp. soy sauce
  • ½ tsp. kosher salt

  • 1 Tbsp. toasted sesame seeds
  • 1 bunch cilantro, coarsely chopped

Instructions

  1. In a large bowl, whisk together the soy sauce, salt, and sugar. Slowly whisk in the sesame oil, then add the red bell pepper, peanuts, sesame seeds, and cilantro and toss to coat. Transfer to a platter and serve immediately.

Char siu (meaning “fork roasted”) is a typical cooking style in Cantonese cuisine, in particular for the method behind the beloved steamed pork buns on so many dim sum menus. In Houston chef Chris Shepherd’s succulent long-marinated chicken-based rendition, beet powder lends a naturally bright red color as well as a little sweetness.

Yield: 4–6
Time: 2 days 4 hours
  • ¼ cup brown sugar
  • ¼ cup honey
  • ¼ cup ketchup
  • ¼ cup soy sauce
  • 3 Tbsp. <a href="http://www.saveur.com/diy-beet-powder-recipe">homemade</a> or store-bought beet powder
  • 2 Tbsp. rice vinegar
  • 1 Tbsp. hoisin sauce
  • ½ tsp. Chinese five-spice powder
  • One 4-lb. whole chicken, halved lengthwise, backbone discarded
  • 2 Tbsp. vegetable oil
  • Kosher salt and freshly ground black pepper

Instructions

  1. In a large bowl, whisk together the brown sugar, honey, ketchup, soy sauce, beet powder, vinegar, hoisin sauce, and five-spice powder. Add the chicken and toss to thoroughly coat. Cover with plastic wrap and refrigerate for 2 days.
  2. Heat a grill or grill pan over medium heat. Remove the chicken from the marinade, rub with the oil, and season lightly with salt and black pepper. Place the chicken skin-side down and grill, turning once, until charred and cooked through, about 30–35 minutes. Transfer to a cutting board and set aside to rest at room temperature for 15 minutes before carving into serving-sized pieces. Serve warm.

This recipe for cong bao rou si, or stir-fried pork with leeks, is adapted from Taiwanese home cook, stir-fry expert, and former restaurant owner Pan Suefen. It calls for a “reverse” stir-fry technique, in which the vegetables are cooked before the meat. It tends to be forgiving for a novice stir-fryer, since vegetables release water as they cook and won’t stick the way that meat will if the wok isn’t quite hot enough. 

This pork and leek stir-fry also illustrates the importance of the knife in stir-fry cooking. Leeks are sliced on the diagonal to increase the surface area exposed to the wok; that way, they wilt and release their fragrance faster. The pork is sliced thinly so that it will brown quickly before it loses its moisture. The trick to precisely uniform pieces is chilling the meat in the freezer for 20 minutes—just long enough to firm it up—which makes consistent slicing a breeze. Spoon the finished stir-fry over steamed rice, and dinner is served.

  • 1 tsp. toasted sesame oil
  • 1 tsp. Chinese dark soy sauce
  • ½ tsp. cornstarch
  • ¼ tsp. sugar
  • 2 garlic cloves, finely chopped
  • 10 oz. boneless pork butt, frozen for 20 minutes and cut into 2-in.-by-⅛-in. strips
  • 2 Tbsp. vegetable oil
  • 1 leek, white and pale green parts only, cut on the bias into ¼-in.pieces

Instructions

  1. In a medium bowl, stir together the sesame oil, dark soy sauce, cornstarch, sugar, and half the garlic. Add the pork, toss well, and set aside to marinate for 15 minutes.
  2. Place a large wok or stainless-steel skillet over high heat. When it begins to smoke, add 1 tablespoon of the oil around the edge of the wok and swirl to coat the bottom and sides. Add the leek and cook, stirring and tossing continuously, until fragrant, about 1 minute. Transfer the leek to a plate and set aside.
  3. Return the wok to high heat and add the vegetable oil around the edge of the wok, swirling to coat the bottom and sides. Add the marinated pork and remaining garlic, and cook, stirring and tossing continuously, until the pork is browned, about 2 minutes.
  4. Return the leek to the wok and stir-fry until just tender, about 1 minute. Serve immediately.

  • 4 Tbsp. soy sauce
  • 1 Tbsp. cornstarch
  • 1 lb. boneless, skinless chicken breasts, cubed
  • 3 Tbsp. Shaoxing wine
  • 2 Tbsp. sugar
  • 3 Tbsp. chicken stock
  • 4 tsp. Chinkiang (black) vinegar (or substitute balsamic vinegar)
  • 1 Tbsp. toasted sesame oil
  • 2 tsp. Chinese dark soy sauce
  • 3 Tbsp. vegetable or peanut oil
  • 12 small dried red chiles, stemmed, halved crosswise, and seeded
  • 5 scallions, white part only, thickly sliced crosswise
  • 1 large garlic clove, thinly sliced
  • One ½-in. piece fresh ginger, peeled and finely chopped
  • ½ cup shelled, skinless raw peanuts

Instructions

  1. In a medium bowl, stir together 1 tablespoon of the soy sauce and the cornstarch. Add the chicken, toss well, and set aside to marinate for 30 minutes.
  2. Meanwhile, in a separate medium bowl, stir together the Shaoxing wine, stock, sugar, sesame oil, vinegar, dark soy sauce, and the remaining soy sauce.
  3. To a large wok or nonstick skillet over high heat, add the vegetable oil. When it’s just beginning to smoke, add the chiles, half the scallions, the garlic, ginger, and the marinated chicken, and stir-fry until the chicken is golden, 3–5 minutes. Add the soy sauce mixture and continue stir-frying until the sauce thickens, about 2 minutes more.
  4. Stir in the peanuts, garnish with the remaining scallions, and serve immediately.

  • 2 tsp. cornstarch
  • 2 boneless, skinless chicken breasts, frozen for 20 minutes, halved lengthwise, and cut crosswise into ⅛-in. thick strips
  • 1 egg white
  • Pinch kosher salt
  • 3 Tbsp. vegetable oil, divided
  • One 1½-in. piece ginger, thinly sliced
  • 1 leek, halved lengthwise and thinly sliced
  • 5 celery stalks, cut on the bias into ¼-in. pieces
  • 1 Tbsp. plus 1½ tsp. light soy sauce

Instructions

  1. In a medium bowl, toss together the cornstarch, chicken, egg white, and salt. Set aside to marinate for 10 minutes.
  2. Heat a large wok over high heat until it starts to smoke. Add 2 tablespoons of the oil and swirl to coat the bottom and sides of the wok. Add the chicken and cook, stirring constantly, until opaque, 1–2 minutes. Transfer the chicken along with any juices to a bowl and set aside.
  3. Return the wok to the stove, add the remaining oil, and swirl as above. Add the ginger and leek and cook, stirring constantly, until fragrant, about 30 seconds. Add the celery and cook, stirring frequently, until crisp-tender, about 1 minute. Add the reserved chicken and juices back to the wok, along with the soy sauce, and cook, stirring frequently, until the chicken is cooked through, 1–2 minutes more.

Chewy sweet rice (also called glutinous rice) dough encasing nutty pastes made from seeds, nuts, and beans are a Lunar New Year must-have in China. Not only does the round shape represent family togetherness and reunion, but the sugary fillings symbolize sweetness in the year ahead. They’re especially popular on Yuanxiao Jie, also known as the Lantern Festival, which falls on the fifteenth day of the new lunar year and marks the end of the two-week celebratory period. Almonds, walnuts, and toasted sesame seeds comprise the rich filling in this yuanxiao recipe adapted from Buwei Yang Chao’s 1945 volume, How to Cook and Eat in Chinese.

Time: 45 minutes
  • ¼ cup white sesame seeds
  • ¼ cup almonds
  • ¼ cup walnuts
  • ½ cup sugar
  • 1 Tbsp. shortening
  • 1 lb. sweet rice flour, divided

Instructions

  1. In a small skillet set over low heat, toast the sesame seeds, stirring frequently, until lightly golden brown, 3–5 minutes. Remove from the heat.
  2. In a mortar and pestle or food processor, grind the sesame seeds, almonds, and walnuts to the texture of fine sand. Transfer to a medium bowl and add the sugar, shortening, and 2 tablespoons of water; stir well to form a paste.
  3. In a large rimmed tray, spread enough of the flour to form an approximately ¼-inch layer. Using your palms, roll the sesame seed mixture into small balls (¼ –½ inch in diameter), space them out on the tray, and shake the tray until all the balls are evenly coated in flour. Transfer the balls to a second large rimmed tray and sprinkle with water until the balls are moist. Add more flour to the first tray until the layer is again ¼-inch deep, and transfer the balls back to the first tray. Repeat until all the flour is coating the balls. (This could take as many as 10 rounds. As the dumplings get larger, you may want to divide them onto 2 additional trays so they have enough room to roll around.)
  4. Cook the dumplings: Bring a large pot of water to a boil over high heat. Gently drop in the dumplings and cook, stirring frequently to prevent them from sticking to the bottom of the pot, until most of them float to the surface, about 5 minutes. Add 1 cup of cold water, bring to a boil again, and cook until the dumplings look slightly translucent, about 3 minutes. Use a slotted spoon to transfer the dumplings to serving bowls, then use a ladle to pour 1–2 cups of cooking water into each bowl. Serve warm.

The simple smashed cucumber salad is a perennially popular appetizer in Chinese restaurants, but Jing Gao, founder of chili crisp brand Fly By Jing, likes to add layers to zhuzh it up. One of her favorite ways to incorporate textural contrast is to toss in slippery, chewy pieces of yuba, or tofu skin. Look for the ingredient in dried sheets at your local Asian supermarket, or online. If you can find fresh tofu skin, that also works well (just skip step one).

  • 5 oz. (¾ cup) dried or fresh yuba (tofu skin) sheets, cut into 1-in. pieces
  • 3 small cucumbers
  • ½ tsp. kosher salt
  • 1¼ tsp. sugar, divided
  • 1 Tbsp. Sichuan chili crisp
  • 1 Tbsp. light soy sauce
  • 1 Tbsp. Chinese black vinegar
  • 2 tsp. toasted sesame oil
  • 3 garlic cloves, finely chopped (1 Tbsp.)
  • Sesame seeds and finely chopped cilantro leaves, for garnish

Instructions

  1. If using dried yuba, fill a medium pot about halfway with water and bring to a boil. Add the yuba and cook over high heat until they soften and turn pale, 4–5 minutes. Drain and set aside.
  2. Cut the cucumbers crosswise into approximately 3-inch lengths, then halve each piece lengthwise. Using the flat side of a cleaver, smash the cucumbers to crack the skin. Use a spoon to scrape out the seeds and discard. Cut the cucumbers into bite-size pieces (about 1 inch). Transfer to a large bowl, add the salt and ¼ teaspoon of the sugar, and toss well. Set aside to marinate for at least 30 minutes, or up to 2 hours. (This will extract some water from the cucumbers.)
  3. Meanwhile, in a small bowl, stir together the chili crisp, soy sauce, vinegar, sesame oil, garlic, and the remaining sugar.
  4. Drain the cucumbers of any extracted water. Add the tofu skin and the chili-crisp mixture and toss well to mix. Transfer to a platter, garnish with sesame seeds and cilantro, and serve.

A famous Sichuan snack that Jing Gao, founder of chili crisp brand Fly By Jing, grew up eating is guaiwei (literally, “strange flavor”) fava beans. The crispy, crunchy beans—fried and coated in a sugary, spicy, salty, and tingly coating—are usually served alongside afternoon tea, or as a bar snack. Since fava beans can be harder to find as readily in the United States, Gao often substitutes them with an assortment of mixed nuts. (For a different flavor profile that’s just as enticing, you can also substitute the chile-and-Sichuan-peppercorn mixture with about a tablespoon of mala spice mix.)

  • 1½ tsp. Sichuan red chile powder
  • ½ tsp. kosher salt
  • ½ tsp. ground roasted Sichuan peppercorn
  • ¾ cup sugar
  • 1½ cups assorted nuts, such as cashews, peanuts, almonds, and pecans

Instructions

  1. In a small bowl, whisk together the chile powder, salt, and Sichuan peppercorn.
  2. Line a baking sheet with parchment paper. To a large wok or skillet set over high heat, add the sugar and ⅓ cup of water. Using a spatula, stir continuously until the mixture begins to thicken and bubble and reads 250°F on a candy thermometer, 8–12 minutes. Working very quickly, remove the wok from the heat and add the nuts and salt mixture; toss well to coat. Spread the nuts into a flat layer on the baking sheet and separate them into small bite-size clusters, then set aside to cool to room temperature. Store in an airtight container for up to 2 weeks at room temperature.

If you’ve ever been to a Sichuan restaurant, you’ve probably had lazi chicken, an iconic dish in the regional cuisine. Chunks of golden fried chicken are tossed in a fiery wok and served amidst a sea of scorching red chiles and Sichuan peppercorns. Sichuan chefs usually opt for bone-in chicken, but Jing Gao, founder of chili crisp brand Fly By Jing, likes to serve hers as wings, which are a bit easier to find in a pile of peppers. A gratuitous amount of chilies and Sichuan peppercorns accompany this dish, but worry not, they’re not meant to be eaten—they’re only there to impart depth of flavor and heat. Sichuan chefs often fry their own peanuts for lazi chicken, but Gao uses the brand Huang Fei Hong’s spicy nuts as a shortcut.

Ingredients

For the mala spice mix (makes about ½ cup):

  • ⅓ cup dried erjingtiao chiles, coarsely chopped
  • 2 Tbsp. cumin seeds
  • 1½ tsp. fennel seeds
  • 1 tsp. whole cloves
  • 2 black cardamom pods
  • 2 star anise
  • 3 Tbsp. sugar
  • 1 Tbsp. kosher salt

For the chicken wings:

  • 2 lb. chicken wings
  • 1 tsp. kosher salt
  • 4 cups plus 2 Tbsp. vegetable oil, such as peanut
  • ½ cup dried erjingtiao chiles, cut into 1-in. pieces
  • 1 Tbsp. whole Sichuan peppercorns
  • 3 scallions, green parts removed, thinly sliced
  • ¼ cup finely chopped cilantro leaves, for garnish

Instructions

  1. Make the mala spice mix: In a medium wok or skillet set over medium-low heat, toast the chiles, cumin, fennel, cloves, cardamom, and star anise until fragrant, 3–4 minutes. Transfer to a small bowl to cool to room temperature.
  2. When the mixture is cool, add the sugar and salt. Using a spice grinder or a mortar and pestle, grind the mixture into a fine powder. (Store in an airtight container for up to 2 weeks.)
  3. Make the chicken wings: To a large bowl, add the chicken wings and salt and rub to evenly coat. Into a large wok or pot fitted with a deep-fry thermometer, add 4 cups of the oil and turn the heat to medium-high. When the temperature reads 250°F, add the wings to the wok and fry, working in batches, until cooked through and lightly golden, 10–15 minutes per batch. Transfer the wings to a large paper towel-lined platter, arranging them in a flat layer. Refrigerate, uncovered, for at least 12 hours, up to 24 hours. Reserve the oil in the wok.
  4. When ready to re-fry, set the same wok over high heat, with the reserved oil in it. When the temperature reads 400°F, return the wings to the wok and fry until golden brown, about 5 minutes per batch. Transfer the wings to a cooling rack and dust the mala spice mix evenly over them. (Discard the oil.)
  5. Use a paper towel to wipe the wok clean, then heat the remaining oil over medium-high heat until it is hot but not smoking. Add the chiles, Sichuan peppercorn, and scallions and stir-fry, tossing continuously, until fragrant, about 2 minutes. Return the wings to the wok, lightly dust with more mala spice mix to taste, and toss gently to coat. Transfer to a large platter, garnish with cilantro, and serve.

Rice cakes may be a year-round staple across Asia, but they’re especially popular when Lunar New Year rolls around. In many cultures, rice cakes are symbolic of an auspicious new year, so all shapes and sizes show up on holiday feast tables. This chao niangao recipe, which translates as stir-fried rice cakes, is a Shanghai-style dish—though this version amps up the savoriness with the addition of doubanjiang, a Chinese fermented soybean paste.

  • 3 Tbsp. vegetable oil
  • 3 garlic cloves, finely chopped
  • One 2-in. piece ginger, finely chopped
  • 3 oz. oval-shaped packaged rice cakes (not dried)
  • 1 cup canned sliced bamboo shoots
  • ½ head Napa cabbage, cored and thinly sliced
  • ¼ cup light soy sauce
  • 1 Tbsp. doubanjiang (fermented soybean paste)
  • 1 Tbsp. dark soy sauce
  • 1 tsp. sugar
  • 4 cups spinach
  • 1 cup bean sprouts
  • 1 tsp. toasted sesame oil

Instructions

  1. To a large wok set over medium-high heat, add the vegetable oil. When the oil begins to smoke, add the garlic and ginger; cook, stirring continuously, until fragrant, about 1 minute. Add the rice cakes, bamboo, and cabbage and continue cooking, stirring frequently, until the cabbage is wilted, 4–5 minutes. Stir in the light soy sauce, doubanjiang, dark soy sauce, and sugar, and cook, stirring frequently, until the sauce is slightly thickened, 2–3 minutes. Stir in the spinach, bean sprouts, and sesame oil and continue stir-frying until the spinach is wilted, about 2 minutes. Transfer to serving bowls and serve warm.
