Bamboo steamers aren’t made to last a lifetime, so it’s a wise choice not to overspend. But even though this steamer clocks in at a lower price point, it doesn’t skimp on quality construction. It’s all bamboo (just like our overall best pick) and feels pretty sturdy, so it’s set up to last you a few months or so of frequent use. One feature I especially enjoyed about this steamer is the length of the top loop, compared to the stubby inflexible handles I found on other brands of steamers. It seems like a small thing, but it made the user experience of this tool so much better.

The 12-inch performed quite well, and the steamer is available in several sizes. Though, some feature a different style of steamer “grate” made from thinner bamboo strips vs. the carved wood slats. Bamboo is a sustainable material already, but the addition of a whopping 10 reusable cotton liners in this fully-equipped steamer puts it a step above. Food will stick to the bottom of your steamer (not to mention the occasional possibility of splinters) so using a liner is incredibly important. Though we are quite partial to these parchment paper versions otherwise, we found the smaller mesh of the cotton liners helped regulate the amount of steam allowed to touch the food, given that the bottom slats of this product are set wider and made from thinner material than the normal closer-together strips of wood. 

We also noticed how smooth the wood is on this steamer, which is a huge plus in terms of user experience and quality, as well as the slightly taller height of each tier, which helps to accommodate a wider size range of foods (since nobody likes squished steamed buns). One thing to note: there are a few small areas bound with metal wire, so although the steamer appears to be all wood, it’s not microwave-friendly.

Things to Consider Before Buying a Bamboo Steamer

Size

You’ll want to consider the size of your steamer, not only in terms of how many tiers it has, but also in terms of the diameter. Larger steamers are great for those cooking for a crowd or using the steamer to cook multiple types of food at once (dumplings on one layer, veggies on the other), but also are bulkier to store. But before you choose a steamer size, you should make sure the pan you intend to use can accommodate it well. A rule of thumb to follow is that the base edge of your pan should be about two inches or so away from the edge of your steamer. 

Details

Unlike other kinds of steamers, which can vastly differ from one another, bamboo steamers typically all have a similar standard aesthetic and construction, but there are a few little differences that could make or break your experience. For example, some steamers are treated with chemical coatings to prevent mold. Some cooks prefer to go chemical free, while others might prefer the extra protection against moisture. Certain steamers also use metal pieces like exterior rings to increase durability and ensure that the steamer will hold its shape, which are fine if you’re limiting your steamer use to the pan-based method, but pose a hazard if you’re planning on popping it in the microwave. 

Quality vs. Price

Of course you want a quality steamer, since lower-quality options can be poorly constructed and prone to splintering. But don’t feel like you need to overspend on a bamboo steamer, since these kitchen tools aren’t meant to last a lifetime, but rather replaced periodically as they deteriorate based on how frequently you use them and how well you care for them.

How do I use a bamboo steamer?

A bamboo steamer consists of two or so steamer baskets that stack together, each with a bamboo slat bottom that allows the steam to penetrate, with a lid. You can use just one basket or add others if you have foods with different cooking times (keeping the longer-cooking one in the bottom steamer.) The baskets are traditionally placed inside a large wok pan (but you can get away with a larger saucepan if you are wok-less) filled with enough water so that it boils, but not enough that it touches the basket bottom of the steamer. Chef Joanne Chang also says: “Make sure to line the steamer with parchment or cheesecloth so food doesn’t stick. If you are steaming something juicy you want to put a plate in the steamer to keep the juice from dripping onto the bamboo.”

How to maintain and clean my bamboo steamer?

“Scrub by hand (don’t put in the dishwasher) and let it air dry,” says Chang. “Sprinkle with baking soda and rinse off periodically to help sanitize.”

How long do I soak bamboo steamers before using them?

Hot take: Chef Chang doesn’t soak her bamboo steamers before using them. But if you do choose to go the soaking route, aim to soak around 30 minutes before the first use.

How long do bamboo steamers last?

“Hand-washed and air-dried, and kept clean and free of mold and mildew, it should last six months or so depending on how often you use it,” says Chang. “If it starts to mildew or smell off you should immediately discard it.”

Methodology 

To find out what makes a bamboo steamer a winner, we mostly considered two factors: quality relative to price and overall performance. We gathered a number of steamers to try out based on research and got to work steaming up a few batches of veggies and dumplings to see how they fared—using 13 minutes as a cooking mark for the dumplings and seven for the veggies (note: none were root vegetables, which take a little longer). Although these steamers are typically used with woks, we decided to go with a wide nonstick to better reflect what the most home cooks might carry in their kitchens. We also kept the “two inches rule” in mind here explained in the “things to consider” section, testing the steamers that fit into this size range and then later seeing if the ones we liked came in other sizes. For the sake of testing, we decided against pre-soaking, since our expert explained she doesn’t typically take this step. After taking detailed notes of our out-of-the-box impressions (shape, material, etc.), we took down our cook test findings and combined both to determine what steamers made it onto our vetted list of winners.

We’re so impressed that this little village has given each house a different structure—two of which are the shape of actual houses and not just the simple, stylized gingerbread-house shape we’re used to seeing. The pieces for each house come attached together in sheets, which means you’ll have to detach them yourself, but it’s nice because they won’t get mixed up or damaged like they would if they were bagged together. They are on the delicate side, so definitely take care with taking them apart.

Things to Consider Before Buying a Gingerbread House Kit

Aesthetics

Gingerbread houses are perhaps one of the only desserts where form takes precedence over flavor. When choosing a kit to put together, the top thing you should consider is the overall look and feel. Are you looking for more of a blank canvas to add your own embellishments? Or would you prefer to purchase a kit with elements like existing patterns pressed into the gingerbread and cut-out windows and doors? Most gingerbread house kits will feature a similar six-piece construction—a front and back wall, two side walls, and two roof pieces—but others might feature more facets and flourishes: we’ve seen everything from turn-of-the-century-style homes to reindeer barns.

Quality Kit Components

Yes, we know a lot of folks might choose not to nosh away on their gingerbread houses, but for those who do, a decent quality gingerbread base is a must. Look for a balance between a nicely spiced, lightly sweet cookie that’s still sturdy enough to handle heavy candy patterns with a little icing assist. And the icing that comes in the kit should be tacky enough to hold and almost concrete-like in consistency—an ideal texture would be similar to Royal icing. It’s also a plus when kits include useful extras like piping bags to give you the option to decorate with icing and not just use it as glue, since you have more control. Cook also reminds us of how important it is for these kits to include an ultra-supportive base upon which to build your creation, since you’ll likely want to transport it from the building site. 

Precision

Unless you’re building a gingerbread Leaning Tower of Pisa (which could exist somewhere), you want gingerbread pieces that are made with solid craftsmanship. Cook says to keep an eye out for even color and texture, clean cuts for windows and doors if the model has them, and uniformly shaped walls and roof pieces with straight edges that fit together seamlessly. “Any flaws in the construction will draw attention away from the details,” he says. And if a kit looks perfect at first glance, but then you notice wiggly edges, Cook suggests using a Microplane tool to gently shave down the edges until they’re even.

Let me start by saying I’m pretty good at making pancakes. With a thin coat of butter and my trusty nonstick pan, I can achieve one small batch of flapjacks that are mottled blonde in color with lightly crispy edges and marshmallow-soft centers. But I’m typically only making them for myself in my studio apartment, so factors like consistent size and shape—or a messy technique—don’t matter as much as they would when cooking for a crowd. 

I recently spent a long weekend in a mountain cabin with my family and was tasked with whipping up a batch of pancakes for breakfast one day. I figured this was the perfect time to try out the OXO Good Grips Perfect Batter Dispenser to see if I could keep things more even and efficient across a bigger batch. 

Out-of-the-Box Impressions

At first glance, this dispenser is well-constructed with many thoughtful design details. The idea is to load batter into the top portion of the tool—which has a wide opening, so this is easy and not very messy—and squeeze the handle to open up the rubber tube at the bottom to release your batter. When you’re done, simply release the handle and the tube will be squished shut to stop the flow. 

Right off the bat, I loved that the handle is rubberized, which will keep your grip steady even with buttery or batter-y fingers. It also opens and closes smoothly and is large enough to accommodate any hand size. There is an interior funnel that helps guide your batter toward the dispenser tube and a handy top lid that duals as a drip tray for when you’re in between pancakes, so there’s no extra plate or dish towel needed. And there are four different types of measurement markings on the hopper for you to monitor your amount of batter and portion it out evenly.

Initial Questions 

I’m most interested in simply seeing if this tool does what it claims to do (dispense batter smoothly and cleanly) as well as if it can solve the most prevalent pancake problems: giving each a consistent size, consistent shape, and a less-messy experience overall.

Other considerations include: 

  • Does it work for both thick and thin batters as the website description claims?
  • How much does it drip in the closed position?
  • Is it suitable for making both small and large pancakes? 
  • Does it hold a substantial enough amount of batter for a crowd? 

The Test

I decided to test out this gadget using Bubby’s Pancake Mix (yes, from the iconic New York eatery and pancake mecca) since it’s notably on the thicker side and I wanted to test the brand’s claim that the dispenser works just as well with thicker batters as it does with thinner ones. Plus, it just produces the most fluffy, flavorful pancakes from a mix that I’ve tried, and are just as delicious sans butter, jam, or syrup. 

I prepared two batches: one thick, one thin. The first batch was made according to the package directions which instructs us to keep the batter rather thick and lumpy for fluffier flapjacks. On the flip side (pun intended), I added more milk to create a runnier consistency.

How it Went

I live by the golden rule that the first pancake is always a practice pancake and you cannot judge a batch by its firstborn. That being said, the inaugural pancake from the thicker batter batch was rough. The dispenser needed a good shake of the wrist to get going, and once it began to release batter it came out in little blobs rather than a smooth stream; it produced a pancake resembling a Rorschach ink blot. It’s possible that the rubber dispenser tube causes friction that hinders the flow of batter.

A pro: The dispenser was easily operated with one hand—leaving your other free to hold your pan steady—and had zero leakage when placed back into the closed position, with the exception of a tiny drop left at the bottom of the tube below the closure point. 

Next, we gave the thinner batter batch a go. The dispenser still required a few gentle shakes to get flowing, but fared much better. The batter released at a slow-to-moderate pace that’s pretty easy to keep up with, although there’s a bit of a learning curve in figuring out the right speed and motion for your hand (I found slower spirals starting from the center work best). The interior funnel also worked wonders when it came to shepherding batter from the hopper to the rubber dispenser tube, so you won’t get that wasted half centimeter of the stuff stuck inside at the end. 

Another plus was that the side measurements printed on the hopper remained easy to read throughout the process—I was initially worried the interior batter smear would be a hindrance here in seeing what amount you actually have left—so you can properly dose each pancake to be even in size. Though, the marked measurements skew on the larger side for at-home pancakes in my opinion—you’ve got to be a wizard with your spatula technique to pull off anything beyond silver-dollar size. 

Cleanup & Storage

This dispenser cleans like a dream. It’s technically hand-wash only, but it did fine on my dishwasher’s top rack for an initial clean before use, though I’d say to hand-wash from then on just to be safe. The rubber tube also detaches for easy cleanup, but you probably won’t need to: I held the dispenser in the open position under the running faucet and it was flushed clean within seconds. Storage-wise, it’s on the bulky side and might be a pain for small kitchen dwellers such as myself to find room for, but if you’re someone with moderate to ample cabinet space it shouldn’t pose a problem. 

What I Liked

Final Thoughts

All in all, I’d recommend this tool to someone who typically prefers thinner batters—be it for pancakes, cupcakes or otherwise—cooks for a crowd, prioritizes a tidy kitchen, is exacting about even portions, and who enjoys the convenience of having one hand free. And also, someone with a bit of kitchen space to spare. 

If your batter typically is more viscous (and you don’t mind a little mess), I’d say stick with a quarter-cup measuring cup or even an ice cream scoop in some cases to dole out even amounts. And if you go this route, do yourself a favor and pick up some Bubby’s pancake mix for your next at-home Sunday brunch. Thank me later.

This one is crafted from carbon steel (which is extra sturdy) and has a unique dimpled interior texture, which gives the pan great nonstick properties straight from the box since there’s less material for food to stick to (though we do recommend an initial seasoning for best results). The interior also undergoes a nitriding process that results in a unique iron nitride coating that combats rusting and increases durability. The long handle (and the accompanying lid’s knob) is shaped from beechwood, which not only looks elegant, but also doesn’t hold heat at all.

Things to Consider Before Buying Cookware for Gas Stoves

Heat Conductivity

Perhaps the top benefit of cooking with gas is how nimble it is in responding to a cook’s needs when changing temperatures; it heats in a flash and adjusts immediately with the turn of a knob. A good pot or pan for a gas stove must possess three important qualities: the ability to heat evenly, to retain heat, and to shift temperatures with the stove. Much of this comes down to ply—or, how many layers of material make up the vessel. We feel that 5-ply is the sweet spot for gas stoves, since it’s thick enough to heat evenly and hold onto to heat to promote consistent cooking (unlike 3-ply), yet thin enough to react to temperature changes (unlike 7-ply).

Material

While you should feel free to use nearly any material on a gas stove, there are some that naturally perform better than others. And mostly, it takes a combination of materials. For example, stainless steel is often seen as the top choice for gas stoves—it’s tough, non-reactive, and relatively easy to maintain—but it typically sandwiches an aluminum or copper core, which both are excellent heat conductors but prone to warping on their own. All in all, feel free to choose whichever material suits your preference (which is why we included a range in this article); —we know a nonstick devotee might not make the jump to cast iron overnight.

Durability 

You can imagine how hard cooking over an open flame can be on your pans. That’s why durability is paramount when it comes to selecting cookware for your gas stove. Look for vessels that have well-affixed handles on both their bodies and lids, with thick bottoms and high-quality materials. And don’t be afraid of investing in a set that’s on the pricey side (if your budget allows), since splurging on quality now will ensure your cookware will perform well now and for decades to come.

Finishing Touches

Beyond just the basic body of the pot or pan, consider if you’d enjoy any additional bells and whistles that would improve your cooking experience. Heat-resistant handles are wonderful when a pot holder isn’t handy and glass lids vs. solid ones help you more easily monitor your food as it simmers away. Some materials might be dishwasher safe, cutting down on cleanup time. And if a shimmery copper exterior or candy-colored enamel gets you even more excited to spend time in the kitchen, we say go for it.

“What I like about cooking with gas is I can see it,” says Sewall. “Seeing how high or low the heat is on what you are cooking is a great advantage when cooking and having the ability to make subtle adjustments gives you the best chance of success.”

Do you need special pans for the gas stove?

You don’t need special pans to cook on a gas stove, though our chef expert feels some materials fare better than others. “Heavy duty stainless steel is also great for cooking but don’t be afraid of a good ol nonstick pan for simple tasks,” says Sewall. “I don’t love aluminum pans on gas, they tend to be thinner metal and hard to control over direct fire from gas stoves.”

Can you use cast iron on a gas stove?

Yes—in fact, it’s one of chef Sewall’s favorite materials to cook with. “I love cast iron when cooking on gas, it holds the heat better than most pans and gives a great cooking surface.” 

Why is my gas stove making my pots black?

Black-bottomed pots are caused by quick, high-heat cooking or having too much heat concentrated on one specific area. Cooking longer over lower heat will prevent this, but don’t worry if that’s not possible—simply remove the marks with a little oven cleaner. A regularly cleaned stove also helps mitigate black marks, since food and oil left on the burners can smoke. 

What’s a top, chef-approved tip for choosing cookware for a gas stove? 

Sewall says: “Spend the money on good pans and take care of them. If you buy quality they should last for generations to come.”

If you’re a fanatic about cast iron or tend to stick to nonstick pots and pans, having cookware that you feel comfortable with ultimately wins out. Adjustability

Look for sharpeners with fine-tuning angle adjustments or angle finders. Every knife has a specific angle where the apex of the cutting edge lives and it’s imperative that you are able to adjust the angle of your sharpener to suit that angle. If you sharpen the blade at an incorrect angle, it can change its geometry, therefore leading to more drag when you’re cutting and reducing effectiveness. How will I know when a knife needs sharpening? 

“Sharpening is the removal of steel on the cutting edge to reestablish a sharp wire edge that does the cutting,” says Feder. “When you’re wiping down your knife sometimes, you’ll notice the towel getting caught at the edge on a burr. That burr is the wire edge that is rolled over. This wire edge helps create sharpness and makes the knife go through food. If that wire edge is turned over it can feel dull.”

What is the best way to sharpen knives at home? 

Electric knife sharpeners are a great place to start for beginners who might be apprehensive of free-hand sharpening methods. Once you get the lay of the knife-sharpening land, Feder recommends giving a whetstone a try. But no matter which method you choose, it’s paramount to keep up a regular knife-care routine. “If the knife is really dull, it will definitely take longer to bring the edge back,” he says. “It’s like mowing the lawn. If you do it regularly it’s less work.” Feder also advises not to over-sharpen, but rather opt for a quick touch-up with a ceramic honing rod in between sessions. “I’m always surprised how a couple little careful swipes on these will lengthen the sharpness time on knives,” he says. “The steel of the knife and how hard it is will also determine how long the edge will retain the edge.”

Are knife sharpeners bad for knives?

“Not at all,” says Feder. “The mindset of the user is that every time a knife is to be sharpened, material is to be removed. If you maintain a degree of sharpness you’ll be slowly taking less material off and you’ll lengthen the life and enjoyment of a knife. If you wait until the knife is blunt and a new edge needs to be established frequently, it can change the geometry of the knife. The more frequent the sharpening, the easier it will be to maintain sharpness and the longer the knife will last.”

Do professional chefs use electric knife sharpeners?

“Yes: there are high-end electric knife sharpeners that have spinning stone wheels that are partially submerged in water,” says Feder. “As the wheel spins, water is always flowing on the stone—which keeps the blade cool. They have angle finders that set rails and guides to precisely hold the knife at the proper position. They also have multiple wheels with coarse to fine grits which fine-tune the edge. They even have leather stops that clean up the micro burrs. These are very expensive, but effective.”

What do professionals use to sharpen knives?

“Most professional chefs and cooks learn how to use whetstones and have a routine to keep their knives sharp,” says Feder. But he also notes that different cooks have different needs for how razor-edged their blades should be. “Prep kitchens that, many times, do the brunt of the cutting work—carrots for mirepoix, shaving onions for a batch of caramelized bacon jam, working through five cases of butternut for soup—will use less expensive knives and need them sharp and sharpened fast to keep up with the onslaught of products coming in every day. It isn’t all shaved duck prosciutto and fluke crudo.”
