If you want to eat peach cobbler any time of the day, Barry Sorkin from Smoque BBQ in Chicago may have the recipe you’re looking for. “It’s kind of like a fruit cup,” Sorkin says. “You could almost argue it’s breakfast food.” Roasted almond streusel adds a complex nuttiness to his version, which has a crunchy finish more akin to crisp than classic cobbler.

Time: 1 hour 20 minutes

Ingredients

For the peach filling:

  • 3 lb. fresh or thawed frozen peaches, chopped into 1-in. pieces (about 6 heaping cups)
  • ½ cup sugar
  • 2 Tbsp. fresh lemon juice
  • 2 tsp. almond extract
  • ½ tsp. ground cinnamon

For the topping:

  • 1 cup light brown sugar
  • ¾ cup all-purpose flour
  • 12 Tbsp. cold unsalted butter, cubed
  • ½ tsp. ground cinnamon
  • ½ tsp. ground nutmeg
  • ½ tsp. kosher salt
  • ¾ cup sliced almonds

Instructions

  1. Position a rack in the center of the oven and preheat to 375°F. Line a baking sheet with foil.
  2. Make the filling: To a large bowl, add the peaches, sugar, lemon juice, almond extract, and cinnamon, and stir to coat. Set aside.
  3. Make the topping: To a large bowl, add the brown sugar, flour, butter, cinnamon, nutmeg, and salt. Using a pastry cutter or your fingers, quickly work the butter into the dry ingredients until only small pea-sized crumbs remain. Add the almonds and toss once more to distribute. Refrigerate the topping until ready to bake.
  4. Divide the filling among six 4-ounce ramekins, mounding the fruit over the rim of the ramekin (the filling will shrink significantly in the oven). Top with a generous handful of the crisp topping, then transfer the ramekins to the lined baking sheet and bake until the peaches are juicy and the topping is golden and crisp, 30–35 minutes. Remove from the oven and set aside to cool slightly. Serve warm or at room temperature.

Peanut- and cilantro-topped ice cream may seem surprising, but this is a popular flavor combination in Taiwan’s coastal Yilan County, where night market vendors roll the ingredients in thin wheat-flour wrappers for a beloved snack called hua shen juan bing qi. At Win Son in Brooklyn, pastry chef Danielle Spencer fries fluffy milk-bread dough to make an oversized and shareable ice cream sandwich inspired by the famous street food. For an over-the-top flourish, Win Son co-owner and chef Trigg Brown suggests frying the peanuts in salted butter.

Yield: Makes 8 sandwiches
Time: 8 hours
  • ¾ cup plus 2 Tbsp. whole milk
  • ½ tsp. active dry yeast
  • 2 cups plus 3 Tbsp. (275 g) bread flour
  • 2 Tbsp. sugar
  • 1 tsp. kosher salt
  • 8 Tbsp. softened unsalted butter
  • Vegetable oil, for frying
  • Vanilla ice cream
  • Coarsely chopped peanuts, cilantro leaves, sesame seeds, flaky salt, and sweetened condensed milk, for garnish

Instructions

  1. In a medium pot, cook the milk over low heat until just barely warm to the touch (75–80°F). Transfer the milk to a stand mixer fitted with a dough hook, sprinkle in the yeast, and set aside until slightly foamy, 3–5 minutes. Add the flour, sugar, and salt, then mix on the lowest speed just until a shaggy dough begins to form, about 4 minutes. Turn the speed up to the second-lowest setting, add the butter, and continue mixing, scraping the bottom and sides of the bowl occasionally, until the butter is thoroughly incorporated and the dough is smooth and elastic, 8–10 minutes. Remove the dough hook, cover the bowl tightly with plastic wrap, and refrigerate for at least 6 hours, or up to 2 days.
  2. Lightly oil a clean work surface. Line a large baking sheet with parchment paper and lightly oil the paper as well. Turn the dough out onto the work surface and, using a bench knife or chef’s knife, divide into eight 2½-ounce portions. Roll each portion into smooth balls, cover loosely with plastic wrap, and set aside at room temperature until the buns have nearly doubled in size, 45–60 minutes.
  3. Place a wire rack in a large rimmed baking sheet and set it aside. Into a heavy pot fitted with a deep-fry thermometer, pour oil to a depth of 2 inches and turn the heat to medium-high. When the temperature reads 325°F, working in batches, gently drop the dough portions into the oil and fry the buns, using a metal spoon to occasionally flip them and baste the tops with the oil, until the exterior is blistered and deep golden brown, 4–6 minutes per batch. Using a slotted spoon or spider skimmer, transfer to the rack to cool while you fry the rest of the buns. Set aside until cool to the touch.
  4. Use a serrated knife to split each bun in half. Place half of the halves into individual shallow bowls or on a large platter. Top each with a generous scoop of ice cream, followed by the remaining bun halves, pressing down lightly to make sandwiches. Garnish with peanuts, cilantro, sesame seeds, flaky salt, and sweetened condensed milk, then serve immediately, with spoons.

  • 26 Tbsp. (13 oz.) unsalted butter
  • 3 cups (21 oz.) light brown sugar
  • 2¾ cups (14 oz.) all-purpose flour
  • 2 tsp. fine salt
  • 1½ tsp. baking soda
  • 2 large eggs
  • 4 large egg yolks

Instructions

  1. In a large pot over medium-high heat, melt the butter and cook, using a wooden spoon to stir and scrape the bottom of the pot frequently, until the solids are toasty, browned, and very fragrant, about 8 minutes. (Do not walk away from the stove; butter can go from perfectly browned to burned and bitter very quickly.) Remove from the heat, then immediately stir in the brown sugar. Set aside until room temperature.
  2. In a large bowl, whisk together the flour, salt, and baking soda.
  3. When the butter-sugar mixture has cooled, use the wooden spoon or a silicone spatula to stir in the eggs and yolks, then stir in the flour mixture until just combined. Cover and refrigerate the dough until firm, at least 4 and up to 24 hours.
  4. Position racks in the top and bottom thirds of the oven and preheat to 350°F. Scoop the dough into 32 two-tablespoon portions, then roll each into golf ball-sized spheres. Working in batches, arrange the spheres 3 inches apart on two parchment-lined baking sheets and bake, rotating and swapping the top and bottom pans halfway through cooking, until the cookies have spread and are lightly browned on top and slightly darker at the edges, about 12 minutes. Transfer to a wire rack. Between batches, rinse (under cold water), dry, and reline the baking sheets with parchment. Serve warm or at room temperature, or, if making ice cream sandwiches, chill the cookies before assembling.

Browned in the oven, this large-format pancake makes for a fun alternative to the traditional griddle cakes. This version of the Dutch baby is adapted from former Honolulu magazine editor David Eyre, who famously shared the recipe from the 1919 Hotel St. Francis Cookbook with New York Times food editor Craig Claiborne in 1966. It became the most requested recipe of Claiborne’s career—and still holds up today. 

While the Dutch baby comes out of the oven perfectly puffed, it collapses quickly—the surface will deflate like a balloon as you sprinkle the powdered sugar and lemon juice on top. The pancake will still be just as delectable, but if you want your guests to enjoy the dramatic presentation, plan accordingly.

  • 2 large eggs
  • ½ cup all-purpose flour
  • ½ cup whole milk
  • ¼ tsp. freshly grated nutmeg
  • 4 Tbsp. unsalted butter
  • 2 Tbsp. confectioners’ sugar
  • Juice of ½ lemon (about 1½ Tbsp.)
  • Jam, preserves, or marmalade, for serving (optional)
  • Toasted walnuts, for serving (optional)

Instructions

  1. Position a rack in the center of the oven and preheat to 425°F. In a large bowl, whisk the eggs until frothy, then whisk in the flour, milk, and nutmeg until incorporated but still slightly lumpy (do not overmix or the pancake will be tough).
  2. In a 12-inch ovenproof skillet over medium-high heat, melt the butter. When it stops foaming, pour the batter into the center of the skillet. 
  3. Bake until the pancake is puffed and golden, about 15 minutes. (If you open the oven door to check, be careful not to disturb the skillet or else the pancake will start deflating.)
  4. Working quickly, remove the skillet from the oven and sift the sugar over the surface of the pancake. Return to the oven and bake for 2 minutes more.
  5. Sprinkle the pancake with lemon juice and serve immediately with jam and walnuts, if desired.

The tail end of winter citrus season meets the bounty of springtime seeds in this fragrant snacking cake. Some of my garden favorites—including poppies, sunflowers, pumpkins, and fennel—lend their edible seeds to a crunchy brown-sugar topping that contrasts with the tender, orange-scented olive oil cake. In trying to come up with a treat to highlight some of the seeds I plant in my garden each year, I reached out to my friend Katy Beyer, head baker at Florence Pie Bar in Florence, Massachusetts. She had the ingenious idea to bake the seeds in a brown sugar and butter mixture at the bottom of the cake, and invert it before serving, like a tarte tatin or an upside-down cake

The crunchy, chewy seed layer and the cake batter utilize both orange zest and juice: Two medium-size oranges, such as navel or Cara Cara, should produce enough. Hulled pumpkin seeds and sunflower seeds are often sold dry-roasted, but you can also use raw hulled seeds since they will toast in the pan as the cake bakes.

Time: 1 hour 50 minutes

Ingredients

For the seed topping:

  • 3 Tbsp. unsalted butter, plus more for greasing
  • ½ cup dark brown sugar
  • 1 Tbsp. fresh orange juice
  • 1 tsp. finely grated orange zest
  • ¼ tsp. kosher salt
  • 3 Tbsp. pumpkin seeds, hulled
  • 3 Tbsp. sunflower seeds, hulled
  • 1 Tbsp. poppy seeds
  • 2 tsp. fennel seeds

For the cake batter:

  • 1½ cups all-purpose flour
  • 2 tsp. baking powder
  • ½ tsp. kosher salt
  • 1⅓ cups sugar
  • 1 tsp. finely grated orange zest
  • 1 cup plain whole-milk yogurt
  • 2 Tbsp. fresh orange juice
  • ½ tsp. vanilla extract
  • 3 extra-large eggs
  • ½ cup extra-virgin olive oil
  • 3 Tbsp. poppy seeds

Instructions

  1. Position a rack in the center of the oven and preheat to 350°F. Lightly grease a 9-inch round cake pan with butter and line with parchment.
  2. Make the seed topping: In a small pot over low heat, melt the butter. Add the brown sugar, orange juice and zest, and salt, and cook, stirring continuously, until the sugar is dissolved and the mixture is lightly bubbling, 1–2 minutes. Stir in the pumpkin seeds, sunflower seeds, poppy seeds, and fennel seeds. Pour the seed mixture into the prepared pan, using a silicone spatula to spread the mixture into an even layer. Set aside.
  3. Make the cake batter: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. In another medium bowl, use your fingers to rub the sugar and orange zest together until the mixture is moist and fragrant. Add the yogurt, orange juice, vanilla, and eggs, and whisk to combine.
  5. Slowly whisk the dry ingredients into the wet ingredients until just combined. Using a silicone spatula, fold in the oil and poppy seeds until fully incorporated.  
  6. Carefully pour the batter into the prepared pan, covering the seed mixture. Bake until a tester inserted into the center comes out clean, 35–45 minutes. Allow to cool slightly, then run a butter knife or offset spatula around the edge of the cake to loosen, and invert onto a cooling rack. Remove the parchment, and allow the cake to cool completely before serving.

The late, great American cookbook author Marion Cunningham famously carried with her a photograph of a table loaded with angel food cakes, all slightly different: some tall, some short, some white and fluffy, some in a Bundt shape. The photo was taken at a meeting of the Baker’s Dozen, a group of pro bakers including Alice Medrich and Carol Field who met regularly to exchange problems and solutions. Each of the cakes was baked by the members from the same recipe. “If all our results were this different,” Cunningham sympathized, “think of the plight of the poor home cook.” This recipe in question is this one, from “cookie baker for the stars,” Tom Roach, adapted with a bit of Cunningham’s gentle advice.

This recipe originally ran alongside Christopher Hirsheimer’s 1999 article, Baking Lessons.

Time: 1 hour 20 minutes
  • 1½ cups sifted cake flour
  • 1½ cups superfine sugar
  • 1½ cups egg whites (from 11–12 large eggs)
  • 1½ tsp. cream of tartar
  • 1 tsp. vanilla extract
  • ½ tsp. fine sea salt

Instructions

  1. Sift and measure flour. Add a third of the sugar and sift together three times. (M.C. prefers 1¼ cups granulated sugar to 1½ cups superfine sugar, which she feels makes the cake too sweet. She sifts the flour by itself and adds sugar directly to the egg whites.)
  2. Place into a large mixing bowl the egg whites, 2 tablespoons cold water, cream of tartar, vanilla, and salt—yes, all at once! Whip until barely stiff enough to hold a peak when the beater is lifted, but not dry. Gradually add the remaining sugar, 2–3 tablespoons at a time, whipping gently after each of the first few additions, then folding rather than beating towards the end. (M.C. sprinkles the sugar into the whites in four parts as she beats, until the whites are shiny and hold soft peaks.)
  3. Add the sifted flour and sugar, 3–4 tablespoons at a time, and fold gently until smooth after each addition. Pour the batter into an ungreased 10 tube pan and bake in a preheated 325°F oven about 1 hour. (M.C. sifts the flour into the egg whites as she’s folding it in.)
  4. Invert the angel food cake and cool completely before removing from pan. (M.C.: Or invert the pan on a bottle until cake cools.)

How to make Baguettes

Let me share something with you: I love bread. Baking (and then consuming) a homemade loaf is one of life’s most enjoyable simple pleasures. I admit that the process does require a bit of planning—and a few hours of downtime. And yet the results are incredibly rewarding and absolutely worth the effort. As someone who, years ago, became obsessed with baking bread and then went on to work in a professional bakery, I always advocate for home cooks to try their hand at making their own bread at home. Learning how to make a baguette is a simple and straightforward starting point.

Much like the simple roast chicken or sky-high soufflé, a perfectly executed baguette is considered one of the best marks by which to judge a master of culinary craft. French President Emmanuel Macron successfully advocated to include the slender loaves in UNESCO’s list of “Intangible Cultural Heritage”—a process that took six years to provide the necessary documentation! Amateur bakers tend to test the waters by making boules, bâtards, and pan loaves. A baguette, on the other hand, can seem a bit more intimidating. In reality, these loaves require only a handful of tools and ingredients that you likely already have in the kitchen, and are achievable for anyone with a hot oven and some time. Though your first attempt might not look exactly like those at your local bakery, learning how to make a baguette is all about practice (and enjoying the fresh-baked results).

What you need:

Tools:

  • 2 large mixing bowls or a stand mixer fitted with dough hook attachment
  • Digital Scale*
  • Whisk
  • Bench Scraper
  • Cast iron skillet 
  • Parchment paper
  • Baking Sheet 
  • Very sharp paring knife, razor blade, or bread lame

Ingredients:

  • 1½ cups (355 g) warm (not hot!) tap water (between 105°F-115°F)
  • 1½ tsp. (5 g) active dry yeast**
  • 3¼ cups (462 g) all-purpose flour***  
  • 1¾ tsp. (5 g) kosher salt
  • Neutral oil, such as canola, sunflower, or vegetable, for greasing
  • 2 cups boiling water (very hot tap water can also be used)

*I highly recommend investing in a digital scale for use in any home baking project. In a professional bakery, every ingredient is measured in grams. This is for a few main reasons: Multiples of 10 are incredibly easy to scale up and down as needed, and gram measurements are more precise than pounds and ounces and more accurate than cups and tablespoons. 

**Bread flour can also be used in this method, although its higher protein content will make for a “stronger” dough, with more elasticity when proofing and shaping.

***You are also welcome to substitute instant dry yeast for active dry yeast, just be aware that the fermentation time when using the instant version will be slightly faster. This will speed up fermentation and proofing times by about 15 minutes at each stage. I prefer to use active dry yeast in this recipe because a slower fermentation time results in a more flavorful final product.

BEFORE YOU BEGIN

Traditional baguettes are made using a type of preferment called a poolish. This mixture of yeast, flour, and water is mixed a few hours ahead of time, then added to the final dough to increase its “extensibility” (in other words, stretchiness, which makes shaping easier). It also lends the finished product a more complex and yeasty flavor than breads made with “straight doughs” mixed without preferments. The loaves are also often cold-proofed for several hours (and even overnight) to increase flavor depth as well. The method in this streamlined tutorial skips those steps, and instead shortens the entire process to about four hours. If you want to get a head start (and a more pronounced flavor), cover the shaped loaves with a tea towel and proof overnight in the fridge before scoring and baking them, as described below, the following morning. 

STEP 1: Mix and knead the dough.

In a large bowl, whisk together the water and active dry yeast, then set aside at room temperature until slightly foamy, about 10 minutes. (If the yeast does not begin to foam at the surface, it’s probably past its prime. Discard it and grab some fresh yeast before continuing.) Add the flour, then, using a fork or your hand, stir until all the flour is absorbed and there are no dry pockets. Set aside to allow the flour to hydrate for 20 minutes.*

Lightly flour a clean work surface. Sprinkle the salt over the dough, then transfer to the surface and knead until all the salt is incorporated and the dough is elastic and mostly smooth, 9–12 minutes. (If using a stand mixer, mix the dough on medium-low speed for 4–5 minutes.) Form the dough into a ball. Lightly grease a clean, large bowl, transfer the dough into it, cover, and set aside until the dough has nearly doubled in size, about 45 minutes. Note: The warmer and more humid the environment in your kitchen, the faster your dough will rise. During the colder months, one of my favorite techniques is to ferment the dough right in my oven with the pilot light on, or near a warm radiator. 

Letting the dough hydrate and rest before adding the salt is a process known as autolyse. This process allows gluten bonds to start forming gently—before you start working the dough—reducing kneading time and resulting in a more irregular, open crumb structure.

STEP 2: Stretch and fold the dough.

Imagine your dough ball as having four corners. Grab the top two corners (furthest from you) and lift them up and away from the sides of the bowl, folding them over towards you. Rotate the bowl 180 degrees and repeat. Now do the same with the right and left sides, respectively. Your dough should now resemble a folded envelope. Carefully remove the “envelope” from the bowl and invert it, placing it back in the bowl, seam side down. Cover the bowl with plastic wrap and return to a warm area until doubled in size again, another 45 minutes to an hour. 

You may be used to seeing bread recipes that instruct you to “punch down” the dough (in other words, deflate the dough of any gasses formed during the fermentation process). I don’t like to do that here, because removing these gasses can lead to a denser loaf. Instead, this folding process helps to both redistribute the entrapped gasses and ensure a more even temperature throughout the dough.

STEP 3: Cut the dough into three pieces.

Carefully transfer the dough to your lightly floured surface, once again taking care to not deflate it excessively. Place a large cast iron pan on the floor of your oven, adjust the oven rack to the center position, and  preheat to 450ºF. Using a bench scraper or sharp knife, divide the dough into three equal pieces (extra credit here if you have a kitchen scale!). Roll each piece into a tight oval (the dough should be springy if you poke it with your finger). Cover the ovals with plastic wrap or a tea towel and set aside at room temperature until the dough is “relaxed,” 15–20 minutes.

STEP 4: Shape and final proof the baguettes

Line a large baking sheet with parchment paper, dust lightly with flour, and set aside. On your lightly floured work surface, lightly press and stretch one of the dough pieces into a rectangle. Pick up the top two corners and fold them towards you, stopping halfway. Repeat with the bottom corners (away from your body this time). The dough should now resemble a tube, with a seam running along the center. Place the tube seam-side-down, and repeat the process with the other two dough pieces. 

Then, go back to the first tube: Position your hands at the center, then carefully roll the log of dough back and forth, applying pressure toward either end and elongating the dough as you go. Repeat this process a couple of times until the loaf is about 16 inches long, and tapered at the ends. Continue with the other two pieces of dough, then place the baguettes seam-side-down on the lined baking sheet. Cover with a sheet of plastic wrap or very slightly damp tea towel and set aside at room temperature until the loaves are slightly puffed up and the dough bounces back slightly when poked gently with your finger, 20–30 minutes.

STEP 5: Score and bake the baguettes.

After scoring your baguettes, you’ll want to move as quickly as possible when loading them into the oven, so be sure that it’s fully preheated before you proceed. 

Using a sharp knife or razor blade held at a 30 degree angle, cut four evenly spaced slashes along the top surface of each baguette. If you have a spray bottle on hand, give the loaves a light spritz of water, then, quickly and carefully transfer the baking sheet to the oven, pour at least 2 cups of boiling water into the hot cast iron skillet, and shut the oven door. Bake the loaves until golden brown, 25–30 minutes. Remove the baguettes from the oven and do your best to let them cool before diving in. 

A steamy oven is crucial for achieving a good rise and a thin and crispy crust. The steam created from the initial heat of the skillet will fill the oven, then condense and settle over the surface of the baking loaves. That moisture keeps the outside of the dough hydrated and springy, allowing for more “oven spring” as the loaves bake. Without steam, the outer layer of bread “crisps up” before the internal temperature has risen enough to cause the gasses to expand, and your bread can end up dense, hard, and misshapen.

Tip: Most home ovens have vents that let out steam, usually above and behind the cooktop. In order to retain as much steam as possible, I recommend using a rolled up kitchen towel to block these vents while you bake—every little bit of steam helps!

How to store leftover baguettes

Baguettes tend to go stale within a day or two, and leftovers are best kept at room temperature in a bread box or a waxed canvas or plastic bag. Fully cooled bread can also be wrapped tightly in plastic and stored in the freezer for several weeks. And should you find yourself with some stale leftovers, don’t throw them out. I like to cube stale bread, toast in a 375°F oven until golden-brown, then toss them in some olive oil and savory seasonings to make croutons. Or, simply pop the cubes in the food processor and blitz them down into homemade breadcrumbs.

The madeleine is not a showy French pastry. Consider its humble shape: As standard a version of a seashell that can be imagined; the kind any beachgoer has seen thousands of times without a second thought. The flavor? A pure expression of its ingredients, what the Larousse Gastronomique says is simply sugar, flour, melted butter, and eggs. Set against a case of elaborate viennoiserie, jaunty mille-feuilles, and colorful macarons, the madeleine demures.

But at Le Comptoir, the barely year-old pâtisserie on the ground-floor of Paris’s historic Hotel Ritz, the dainty pastry takes center stage. That’s because the hotel’s head pâtissier (and Netflix’s “Chef in a Truck”) François Perret has kind of a thing for this understated sweet. In the cream-and-peach-hued boutique, I found the madeleine taking many forms: Palm-sized and filled with passionfruit, blackberry, and caramel; a classic version, but made XXL; blitzed into a milkshake. There’s even a madeleine-that’s-not-a-madeleine—an intricate trompe l’oeil entremet made up of mousse, custard, and cake fashioned in the shape of the far more modest treat. Madeleines even adorn the wallpaper (which is now my phone background). I brought home two boxes full of them—perfect keepsakes, oval-shaped and festooned with playful illustrations of César Ritz, Auguste Escoffier, and chef Perret himself.  

Back in New York, I’ve recently been served madeleines after both seafood (tiny, tried-and-true), and fried chicken (a cornbread riff). I can’t say I was upset by either. My sweet tooth is subtle at best, and these playful pastries are generally just the right amount of dessert for my taste. This version, adapted from Perret’s recipe, features two types of honey—floral acacia and richer, savory chestnut—and a thin, tart layer of glaze. What an elegant fall delight. The madeleine is ready for its close up.

Yield: makes 23
Time: 24 hours 55 minutes

Ingredients

For the madeleines:

  • 1¾ cups pastry flour
  • 2 tsp. baking powder
  • 3 large eggs, at room temperature
  • ½ cup superfine sugar
  • 2 Tbsp. acacia honey
  • 1½ tsp. chestnut honey
  • 10 Tbsp. plus 2 tsp. warm unsalted melted butter, plus more for greasing

For the icing (optional):

  • 1½ cups confectioners’ sugar
  • 1 tsp. ascorbic acid
  • 2 Tbsp. plus 2 tsp. olive oil

Instructions

  1. Into a large bowl, sift the flour and baking powder and set aside. In a stand mixer fitted with the paddle attachment, beat the eggs with the sugar and honeys until combined. Gradually mix in the sifted flour-baking powder mixture, then, with the mixer running, add the melted butter. Switch off the mixer to avoid overbeating. Scrape the batter into an airtight container and refrigerate for at least 24 hours and up to 2 days.
  2. When you are ready to bake the madeleines, lightly brush a standard-sized madeleine pan with butter. Preheat the oven to 350°F.
  3. Fill each of the pan’s indentations with 2 tablespoons of the batter (depending on the size of your pan, you may need to bake in batches). Transfer to the oven, close the door, then immediately lower the temperature to 325°F. Bake until the tops of the madeleines form small humps and are evenly golden, 10–12 minutes. Cool slightly in the pan before unmolding, then transfer to a wire rack and cool to room temperature. (You may serve the madeleines the day they are baked, but their texture improves after resting a day; once cooled, wrap tightly in plastic wrap and set aside at room temperature for 24 hours.)
  4. If desired, the following day, ice the madeleines: Preheat the oven to 425°F.
  5. Line a large baking sheet with parchment paper and set aside. In a medium bowl, whisk together the confectioners’ sugar, ascorbic acid, olive oil, and ¼ cup plus 1 tablespoon of cool water. Brush the icing all over the madeleines, then arrange them on the lined baking sheet, fluted-side-up. Bake until the icing is dry to the touch, 2–3 minutes. Serve warm or at room temperature.

  • 1 large egg
  • <sup>2</sup>⁄<sub>3</sub> cup (160 g.) whole milk at room temperature (about 75°), plus more for brushing
  • 3 tbsp. (40 g.) slightly warmed water (about 85°F)
  • 2 <sup>1</sup>⁄<sub>3</sub> cups plus 1 Tbsp. (340 g.) bread flour
  • <sup>1</sup>⁄<sub>4</sub> cup plus 1 tsp. (60 g.) sugar
  • 1 <sup>1</sup>⁄<sub>4</sub> tsp. (4 g.) instant dry yeast
  • 2 tsp. (6 g.) kosher salt
  • <sup>1</sup>⁄<sub>4</sub> cup (60 g.) unsalted butter, at room temperature
  • Nonstick baking spray, or a neutral-flavored oil, for greasing

Instructions

  1. In the bowl of a stand mixer fitted with the dough hook, add the egg, milk, water, flour, sugar, yeast, and salt; beat on the lowest speed until a dough begins to form, about 3 minutes. Raise the mixer to the second speed and beat 4 minutes more. (The dough should be smooth and quite sticky). Lower the speed, add the butter, and mix 12 minutes more, using a rubber spatula to scrape down the hook and bowl as necessary.
  2. Lightly grease a medium bowl with nonstick spray, then add the dough. Cover the bowl loosely with plastic wrap and let rest at room temperature until significantly puffed (but not necessarily doubled in volume), about 90 minutes.
  3. Lightly grease a 9-inch loaf pan with nonstick baking spray, then line with parchment paper. Lightly grease the bottom and sides of the parchment paper with more spray.
  4. On a lightly floured work surface, divide the dough into 3 (220-gram) pieces and lightly round them all. Cover the pieces with a clean towel and let rest for 10-15 minutes. Roll one piece into an 11×6-inch rectangle. Fold the two short ends of the rectangle in to meet each other. With the seam side facing up and starting from one of the dough’s shorter ends, roll the resulting rectangle up into a tight cylinder. Set aside, then repeat with the remaining dough pieces.
  5. Transfer the dough pieces crosswise into the prepared loaf pan, being sure to space them evenly.
  6. Preheat the oven to 375°. Meanwhile, lightly cover the loaf with plastic wrap and let rise at room temperature until the dough is just peeking over the rim of the pan, 60-75 minutes. When ready to bake, remove the plastic wrap and brush with milk. Bake until evenly dark golden brown, 35-40 minutes.
  7. Remove and let cool for 15 minutes before using the parchment paper to lift the white bread out of the pan. Transfer to a wire rack to cool completely, at least 1 hour, before slicing.

I never cared much for fresh fruit growing up in Dubai. My mother grew pomegranates, guava, and figs in our backyard and I clearly remember her spending warm summer afternoons looking over her crop, picking only the most perfectly ripe specimens to adorn our living room table. 

Back then, I didn’t so much consider fruit to be a “snack.” Even now, I tend to seek out sugary, often chocolate-covered treats over those “healthier” fresh options. I found figs, with their leathery skins and seedy interiors, especially unappealing. Whenever my mom bit into one of her freshly picked figs with joy, I crinkled my nose in disdain. 

But Arab moms have a knack for persuading their sons to eat just about anything, eventually. One day, after hours spent playing outside in the neighborhood gardens, I rushed into the house, hungry for a snack. Mom urged me to wash up in a hurry so she could make me a jam sandwich, one of my favorite treats. When I sat down at the table, I was so ravenous I didn’t even look at what was wrapped inside the soft pita she put in front of me.

From the first bite, I was overwhelmed. A deep and figgy sweetness contrasted against a buttery layer; a sprinkling of crunchy seeds shone through all the richness with a distinctly warm and earthy aroma. This was no simple jam sandwich. I gazed up at my mom with wonder and asked what  she had fed me.

With a twinkle in her eye, she calmly replied, “Salted butter, caraway seeds…and figs.” I was stunned.

Since then, these three ingredients make up one of my all-time favorite flavor combinations, which I even love to incorporate into—you guessed it—sweet baked treats. If you’re a fig lover (or are on the fence about this magnificent fruit), I encourage you to try this simple yet elegant fig scone recipe. When fresh figs are not in season, feel free to substitute dried ones which have been soaked in warm water or tea for 30 minutes.

Time: 35 minutes
  • 2¾ cup all-purpose flour, plus more for dusting
  • 1 Tbsp. baking powder
  • 1 Tbsp. finely grated lemon zest
  • 2 tsp. caraway seeds, lightly toasted in a dry skillet
  • ½ tsp. fine sea salt
  • ¼ cup sugar
  • 8 Tbsp. salted butter, cut into small cubes
  • 5½ oz. fresh figs, stemmed and cut into quarters
  • ¾ cup heavy cream
  • 2 large eggs, divided
  • ½ tsp. vanilla extract.
  • Turbinado sugar, for topping (optional)

Instructions

  1. Preheat the oven to 400°F. Line a large baking sheet with parchment paper and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, lemon zest, caraway seeds, salt, and sugar. Add the cold butter and, using your fingertips or a pastry blender, quickly work the butter pieces into the dry ingredients until it has broken down to the size of small peas. Add the figs and toss gently to coat them in the flour mixture.
  3. In a medium bowl, whisk together the cream, one of the eggs, and the vanilla. Pour the liquid into the flour mixture, then, using a silicone spatula, fold until a shaggy dough just comes together (do not overmix). (Add more flour, 1 tablespoon at a time and no more than ¼ cup, if the dough seems very sticky.)
  4. Lightly flour a clean work surface and turn the dough out onto it. Lightly flour the surface of the dough, then use your hands to shape it into a tidy circle, 8 inches in diameter. Using a long knife, slice the circle into 8 even wedges. Transfer the scones to the prepared baking sheet, leaving at least 2 inches between each piece.
  5. In a small bowl, beat the remaining egg with a teaspoon of water. Lightly brush the top of each scone with the egg wash and sprinkle evenly with turbinado sugar. Bake until very light golden brown, 16-20 minutes. Serve warm or at room temperature. Leftover scones keep well in an airtight container at room temperature for up to 3 days.

I first met Anne Saxelby in 2008 when I was 23 and working part-time selling cheese at Brooklyn’s Greene Grape Provisions. I was picking up shifts on my days off from cooking at The Good Fork, where I had just gotten an internship that quickly became a job. I needed to pay my rent, but moreover, I needed to feed my insatiable appetite for all things culinary. Cheese was always something I adored, so the Greene Grape gig was a pleasure. My coworkers and I regularly geeked out about new arrivals and Anne’s name came up daily. Her young cheese stall in Essex Market may have been small, but—just like Anne—it was mighty, and even then I could tell she was unstoppable. 

Just about everyone in the cheese world seemed to know Anne. She was disrupting the American dairy industry in the best way, by showcasing domestic cheeses that could hold their own among the European stalwarts. Anne was larger than life, warm, charismatic, and of course, so excited to talk about cheese. She gave me my first taste of Harbison. She introduced me to Jasper Hill, and her beloved Cato Corner Farm. She taught me all about clothbound cheddars, washed rinds, and triple creams. She showed me how to make mozzarella with cultured curds from Pennsylvania, and then, even better, how to turn that mozzarella into stracciatella the next day. If you loved cheese even an iota as much as Anne did, you were an instant friend. She welcomed me on several occasions—beaming with pride—into her little cheese cave in Red Hook, feeding me slivers of whatever wheels her team was portioning for wholesale that day.

But Anne wasn’t just a knowledgeable cheesemonger and affineur. She led a cheese revolution. Her passion gave a platform and a spotlight to dairy farmers doing incredible work. She educated her customers and a new generation of cheese makers and mongers and, gradually, she changed the way the world regarded American farmstead cheeses. She mentored and loved so many, and championed the little guys out there, going out of her way for everyone in her orbit. 

When Anne passed away last fall, she left behind a legacy of education and sustainable agriculture. No one had integrity quite like Anne, and I can’t think of a more fitting way to honor her life and work than to continue celebrating her mission and passions.

I’ve put iterations of my chèvre cheesecake on menus since 2012, and it’s become one of my signature desserts. I was honored that Anne came to taste this dish over the years in various establishments—most recently at Gage & Tollner, where the tangy goat cheese serves as a seasonal canvas and a creamy endnote to dinner. This cake pairs with anything that is lucious and in season: Jammy late-season plums for early autumn; roasted pears and maple later in the season; candied citrus in the doldrums of winter; and macerated berries, cherries, and peaches as spring turns to summer. I hope you’ll make this beauty at home, with a good-quality goat cheese that Anne would approve of. Anne, this cheesecake is forever for you.

Yield: makes One 9-in. cheesecake
Time: 8 hours

Ingredients

For the filling:

  • 20 oz. fresh goat cheese, softened at room temperature
  • 1¼ cup sugar
  • 1 Tbsp. finely grated lemon zest
  • 1 vanilla bean, split lengthwise, seeds scraped and pod reserved, or 2 tsp. vanilla extract
  • 1 tsp. kosher salt
  • 1 cup heavy cream
  • 4 large eggs

For the crust:

  • Nonstick baking spray
  • ¾ cup all-purpose flour
  • ¼ cup whole wheat flour
  • ⅓ cup light brown sugar
  • ½ cup coarsely ground hazelnuts
  • ¼ tsp. kosher salt
  • 5 tablespoons unsalted butter, melted

For the roasted plum compote:

  • 1 heaping pint ripe plums (about 1 lb.; choose a mixture of varieties and colors)
  • 1 Tbsp. extra-virgin olive oil
  • ½ cup granulated sugar
  • 2 Tbsp. fresh lemon juice
  • 4 thyme sprigs
  • ¼ tsp. kosher salt

Instructions

  1. To a food processor, add the chèvre, sugar, lemon zest, vanilla bean seeds, and salt, and pulse a few times to break up any lumps. Drizzle in the heavy cream, pulsing and occasionally using a silicone spatula to scrape down the sides and bottom of the bowl as needed, until no lumps remain (do not overmix). One at a time, add the eggs through the processor’s feed tube, pulsing until each egg is fully incorporated before adding the next.
  2. Place a fine mesh sieve over a large, resealable container, then scrape the custard into it. Using a silicone spatula, press the custard through the strainer, discarding any solids that remain.  Cover tightly and refrigerate for at least 1 hour or up to 48 hours.
  3. Meanwhile, make the crust: Preheat the oven to 325°F. Lightly spray a 9-inch springform pan with nonstick cooking spray, line the bottom with a circle of parchment paper, and set aside.
  4. In a large bowl, stir together the all-purpose flour, whole wheat flour, brown sugar, hazelnuts, and salt. Pour in the melted butter, then use a silicone spatula to stir until the mixture resembles wet sand. Gently press the crust into the prepared pan in an even layer, allowing it to come up the sides for a thin crust. Refrigerate until firm, at least 20 minutes or up to 12 hours.
  5. Bake the crust until it is golden brown, fragrant, and slightly crisp to the touch, 20–25 minutes. Set aside to cool completely to room temperature before filling.
  6. When you’re ready to bake the cheesecake, preheat the oven to 300°F. Wrap the bottom of the springform pan tightly with aluminum foil and place it in a baking dish that is at least 2 inches deep. Pour the filling into the crust, then place the baking dish in the oven. Pour hot water into the baking dish to a depth of 1 inch, then bake until the cheesecake is set around the edges but still slightly jiggly in the center, about 1 hour.
  7. Remove the baking dish from the oven and cool the cheesecake, still in its water bath, completely to room temperature. Remove the cooled cheesecake from the water bath, cover with plastic wrap, and refrigerate for at least 6 and up to 12 hours.
  8. Make the plum compote: Preheat the oven to 375°F. Pit the plums and cut into halves or quarters, depending on their size. In a 9- by 13-inch baking dish, toss the plums with the olive oil, then stir in the sugar, lemon juice, thyme, salt, and the reserved vanilla bean pod. Transfer to the oven and roast, stirring once halfway through cooking, until the plums are jammy, vibrant, and bubbling, 20–25 minutes. Remove from the oven and set aside to cool to room temperature. Remove and discard the thyme stems and vanilla pod, then scrape the cooled compote into an airtight container and refrigerate.
  9. To unmold the cheesecake, run a thin knife around the edge, then carefully remove the outer ring of the springform pan. Slide the cake onto a serving platter and top with the plum compote. Cut into wedges and serve chilled.
