When people think of okra, they often think of slime and goo, but I’m here to tell you that, with the right technique, the tender green pod might become your new favorite vegetable. 

Growing up in Pakistan, okra was always golden and crisp but also tender, robed in a saucy masala of juicy tomatoes and velvety onions. I still make it this way in my New York kitchen whenever I return from the farmers market with a bag of okra. Following my mom’s recipe, I start with a base of garlic, ginger, chile powder, and turmeric. Then I add the onions and fried okra and simmer everything to meld the flavors.

Sadly, I can’t always find okra at my local farmers market, but a bag of the frozen stuff from the Indian supermarket works great in a pinch. It comes stemmed and sliced, which saves me time in the kitchen; I just cook it a little longer and don’t deep-fry it (the extra water makes it splatter).

When buying fresh okra, look for medium pods that are bright green, dry, unblemished, and no longer than your index finger: The bigger, the tougher is the rule I go by. Okra is surprisingly inexpensive and will keep for about four days, refrigerated in a paper towel-lined produce bag. You can use any extra okra in this Caribbean-Style Sautéed Okra recipe, which is a personal favorite. 

To clean okra, give the pods a rinse, then spread them on a kitchen towel. (They soak up water, so it’s important that they be as dry as possible to ensure proper crisping.) With some quick prep, this stir-fry comes together in no time. I encourage you to sop it up with roti (flatbread), like chapatis or parathas, or to ladle it over basmati rice.

Yield: 4
Time: 40 minutes
  • ¾ cup vegetable oil
  • 1 lb. okra, stemmed and cut into 1-in. lengths (5 cups)
  • 3 garlic cloves, coarsely chopped
  • 1 large white onion, thinly sliced
  • 1 Tbsp. ginger paste
  • 1 tsp. Indian red chile powder, or cayenne pepper
  • 1 tsp. garlic paste
  • 1 tsp. ground turmeric
  • 1 tsp. kosher salt, plus more
  • 2 medium plum tomatoes, cut into wedges
  • Steamed basmati rice or roti, for serving

Instructions

  1. To a large, wide pot over medium-high heat, add the oil. When it’s shimmering and begins to smoke, add the okra and fry, stirring continuously, until softened and browned, 10–15 minutes. Using a slotted spoon, transfer to a plate. To the empty pot, add the garlic and onions and cook, stirring frequently, until the onions are translucent, 4–6 minutes. Add the ginger paste, chile powder, garlic paste, turmeric, and salt and cook until fragrant and beginning to brown, about 4 minutes. Add the tomatoes and cook, stirring occasionally, until the tomatoes have softened, 4–6 minutes. Stir in the reserved okra and continue cooking until the tomatoes have broken down, 2–3 minutes more. Season to taste with salt and serve hot with rice or roti.

Finding morels at the farmers market is like winning the lottery. One morning you’ll spot them, and the next they’re gone. Some years they don’t make an appearance at all, while others they’re around for weeks. That’s because these fussy, rare mushrooms, which are prized for their smoky earthiness, can’t be cultivated: They’re picked in forests between April and July and sprout only under certain climatic conditions. The good news is, you can substitute any edible mushroom in recipes that call for morels. 

When shopping for wild mushrooms, look for ones that are dry and unbruised. Darker morels have more flavor than lighter ones. Don’t be daunted by the price per pound; mushrooms are mostly air, so a few ounces will go far. To prevent molding, store them in a brown paper bag in the fridge (the crisper drawer with the humidity turned off is best), and plan to eat them within a couple of days, lest they get slimy or shriveled. If the stems are too chewy for your taste (shiitake stems are notoriously tough), freeze them along with any trimmings and add them to your next batch of beef or vegetable stock.

When I’m cooking for my family, I love to keep things simple. These days, that means plenty of crusty bread (grilled on my little superintendent-approved electric grill) topped with cheese and something quick-cooked. A few farmers market morels, placed briefly over the hot grates, make this simple dish into something extra-special. If you don’t have a grill, use the broiler or a grill pan to toast the bread; meanwhile, fry the mushrooms directly in the chive-shallot butter until just tender.

Yield: Makes 2 toasts
Time: 30 minutes
  • ¼ cup olive oil, divided
  • 2 Tbsp. sherry vinegar
  • 4 Tbsp. salted butter, softened, divided
  • 1 medium garlic clove, finely chopped (2 tsp.)
  • 1 small shallot, finely chopped (3 Tbsp.)
  • 3 Tbsp. finely chopped chives
  • Freshly ground black pepper
  • 4 oz. whole fresh morels (1½ cups lightly packed)
  • 2 thick country bread slices
  • 2 oz. thinly sliced fontina cheese
  • Flaky sea salt

Instructions

  1. Heat a charcoal grill or set a gas grill to medium-high. In a small bowl, whisk together 2 tablespoons of the oil and the sherry vinegar. Set aside.
  2. In a small skillet over medium heat, melt the butter. When the foam subsides, add the garlic and shallot and cook, stirring occasionally, until softened, 3–4 minutes. Add the chives and cook for about 1 minute more. Season to taste with black pepper and remove from the heat.
  3. Thread the morels onto skewers. When the grill is preheated, use tongs and a wad of oiled paper towels to grease the grates. Add the morels and grill, turning occasionally, until slightly charred and just cooked through, about 10 minutes. Transfer to a cutting board, remove the skewers, then coarsely chop the mushrooms. Add them to the butter mixture and toss to coat.
  4. Drizzle the remaining oil over both sides of the bread slices, then grill, turning once, until there are grill marks on both sides, about 4 minutes total. Turn off the heat. Top the slices evenly with the fontina, cover, and grill until the cheese is melted, 30–60 seconds more. Transfer the toasts to a plate, top with the buttered morels, and drizzle with the vinaigrette. Season to taste with flaky salt and serve hot.

If you’re a mom, the last thing you probably want to do on Mother’s Day is be in the kitchen, especially with your kids, but hear me out. As a chef, I already spend more time in the kitchen than the average person, but it feels different when my daughter’s by my side. It’s me: the person on the train carrying a bucket of food scraps into Manhattan to compost them at the Union Square farmers market, or hauling a trunk full of carrot tops and lemon peels back from the Hamptons after a day of cooking for clients. As a mother, private chef, and recipe developer, I am very conscious of the amount of food waste produced in kitchens and I am constantly looking for ways to reduce my impact. So, I jumped at the chance to test the Mill, a high-tech food recycler designed for home use. It has since become an essential part of my cooking days, and a kitchen tool that I miss when I’m in client homes. 

My biggest concern when testing the bin was that the scraps would smell, but there have been zero complaints (a pleasant surprise since certain members of my household claim they can still smell last week’s dinner). Because it dehydrates the scraps before grinding them, there are no bacteria, and thus, no rotting.  

I’m just happy that the bin’s large capacity means I can test countless recipes, chuck my pineapple peels, my daughter’s unfinished avocado, and meat trimmings in there, without it overflowing. It takes weeks to fill up, and, given my endless stream of food scraps, that’s saying something. (No one tells you how many pints of berries will go soft in your fridge when you have a small human in your home.)

The company was co-founded by tech entrepreneur Harry Tanenbaum—formerly of Apple and Google Nest—which is evident in the sleek, minimalist design. This chic and unassuming kitchen bin takes up about the same space as a trash can; but unlike your stinky trash can, it grinds food scraps into what looks like coffee grounds, except odorless.
 
So what are the results after a year with this food recycling gadget? I have diverted 288 gallons, or 622 pounds, of food scraps from landfills. That’s like filling a small commercial dumpster with every single bread crust, carrot peel, or chicken bone you tossed out all year, or diverting the environmental impact of driving 3,003 miles in a gas-powered car. Now comes the best part: those dehydrated grounds make wonderful compost for enriching the soil in home gardens (or community gardens for city dwellers). If you prefer, Mill will even send prelabeled boxes to ship your grounds back to the company, so it can be used to make chicken feed. (They use ground shipping to minimize carbon emissions.)

The Mill was designed to change people’s behavior, and I have never been more conscientious about the waste in my kitchen, or how I shop at the grocery store for myself and my clients. I try to keep the bin of my Mill as empty as possible, somewhat defeating the purpose, but also doing exactly as the founders intended: changing behavior around food waste, the biggest contributor to landfills. 

No one is saying using a Mill will single-handedly stop climate change (though it’s certainly a start), so it’s important to consider using other tricks and tools in your kitchen. When I’m developing recipes for SAVEUR or cooking for my private clients, that might entail exclusively shopping at my farmers market, or finding creative ways to use the whole vegetable or fruit, leaving no scrap behind. I find inspiration in books like hyperlocal chef Abra Berens’ Pulp: A Practical Guide to Cooking with Fruit, or Margaret and Irene Li’s Perfectly Good Food: A Totally Achievable Zero Waste Approach to Home Cooking. I use compostable kitchen towels to wipe down counters, and reusable bags for groceries. All these little bits matter, and when you add them up, they can make an impact and ease the burden we put on our Earth—the only one we get! And now’s the perfect time to start.

Wisconsin’s Crave Brothers Mascarpone lends this silky spiced chocolate fondue from Fatima Khawaja its rich and milky flavor and a luxurious texture that holds together well over a low warmer. Khawaja served this fondue with a bounty of sweet dippers; do the same, or keep it simple with just one or two sweet treats.

Yield: 6
  • 8 oz. dark chocolate, finely chopped
  • 8 oz. milk chocolate, finely chopped
  • 1 tsp. ancho chile powder
  • 1 tsp. ground cinnamon
  • ¼ tsp. kosher salt
  • 8 oz. (1 scant cup) Crave Brothers Mascarpone
  • 1¼ cup heavy cream
  • Brioche, cut into cubes and toasted; cookies; dates; marshmallows; potato chips; or strawberries, for dipping

Instructions

  1. In a double boiler set over medium-low heat, toss together the dark and milk chocolates, the ancho chile powder, cinnamon, and salt. Add the mascarpone and cream and cook, using a silicone spatula to stir frequently, until mostly melted, about 5 minutes. Turn off the flame and allow the fondue to continue melting over the residual heat, stirring occasionally, until completely smooth, about 5 minutes more. 
  2. Transfer the chocolate mixture to a fondue pot over a tealight or low sterno flame and serve with toasted brioche, cookies, dates, marshmallows, potato chips, or strawberries, for dipping.

My daughter has loved tofu since before she could talk. For her, I keep things simple: drain, slice, pan-fry, serve. But when I’m cooking for myself, I like things saucier: Using her leftovers, I like to make an easy vegetarian stir-fry with bell peppers, Thai basil, and plenty of ginger and garlic. If you’re a sucker for sauce like me, you’ll love the sweet and salty flavors in this recipe—and may even want to double the sauce ingredients. 

Most cooks know their way around a bell pepper—after all, it’s the bedrock of countless cuisines. One potentially life-changing trick for removing those pesky seeds is to use the tip of a knife to cut around the stem: Simply pull up, and you’ll have a seed-free pepper to work with. Another method is to use your thumb to push on the stem until the whole seeded core pops inside. Shake out the pepper, and you’re good to go.

Any color of bell pepper will do in this recipe. If you can’t find Thai basil, use the standard Italian stuff, or substitute cilantro or scallions. With leftover peppers, consider making this tart from Mallorca that’s great for a crowd, or this ragu from Abruzzo made with ground lamb, tomatoes and a pop of sweetness from the peppers.

Time: 40 minutes
  • 1 lb. firm tofu
  • ¼ cup soy sauce
  • 3 Tbsp. seasoned rice vinegar
  • 1 Tbsp. sesame oil
  • 2 tsp. cornstarch
  • 1 tsp. kosher salt
  • ¼ cup vegetable oil, divided
  • 2 medium bell peppers, cored, seeded, and cut into thick slices
  • 1 medium white or yellow onion, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 1 Tbsp. finely grated ginger
  • 1 cup torn Thai basil leaves
  • 1 Tbsp. chili crisp (optional)
  • 2 tsp. toasted white sesame seeds
  • Steamed jasmine rice (optional)

Instructions

  1. Drain the tofu, then place the block on a paper-towel-lined plate. Top with another layer of paper towels and a second plate, then place a light weight (such as two 28-ounce cans) on top. Set aside until most of the water is pressed out and the tofu feels dense and dry to the touch, 20–30 minutes. Pour off any excess liquid, then cut the tofu into ¾-inch cubes.
  2. In a small bowl, whisk together the soy sauce, vinegar, sesame oil, cornstarch, and salt. Set aside.
  3. To a large wok or skillet set over medium-high heat, add 2 tablespoons of the vegetable oil. When it’s hot and shimmering, add the tofu and stir-fry, tossing occasionally, until golden brown, about 8 minutes. Transfer to a paper-towel-lined plate.
  4. Turn the heat to high. To the empty wok, add the remaining vegetable oil, the bell peppers, and the onion and stir-fry until softened slightly and beginning to brown, about 7 minutes. Stir in the ginger and garlic and cook until fragrant, about 1 minute. Add the basil and cook until wilted, about 10 seconds, then stir in the reserved tofu and soy sauce mixture. Cook until the sauce thickens slightly and coats the tofu, about 30 seconds. Remove from the heat, stir in the chili crisp if using and the sesame seeds, and serve with rice if desired.

Historic old-school cafes dot the streets of Vienna, making it easy to pop in for a melange (a milky espresso drink) and something sweet. I decided to visit the pastry shop, Demel, to try its famous Sachertorte—the chocolate cake that is one of Vienna’s most famous desserts—and other confections. When I reached the shop and peeked into the large glass windows, I saw cooks slinging giant, messy pancakes with little fuss and precision. They were making kaiserschmarrn, another sweet coffeehouse staple in Vienna. Before serving, the pancakes were torn up, creating a texturally interesting dish with crispy edges and soft centers all jumbled together. Dusted with powdered sugar and served with rum-soaked raisins, the casual dish was a delightful contrast to the centuries-old establishment’s grandiose interior. It’s also much easier to make than Sachertorte. This kaiserschmarrn recipe, inspired by Demel’s version, is a simple one-pan dessert—minimal flipping skills required. In the spring and summer, feel free to swap out Demel’s boozy dried fruit pairing for a fresh fruit compote—I like black plums quick-simmered with sugar and cinnamon.—Fatima Khawaja

Time: 40 minutes
  • 3 large eggs, whites and yolks separated
  • 1 Tbsp. plus 2 tsp. sugar
  • ¾ cup milk
  • 1 tsp. vanilla extract
  • ½ cup all-purpose flour
  • Pinch of kosher salt
  • 3 Tbsp. clarified butter, divided
  • 2 Tbsp. powdered sugar, for dusting
  • Fresh or store-bought fruit compote, for serving (optional)

Instructions

  1. In a large bowl, use an electric mixer or whisk to whip the egg whites and sugar to soft peaks. In a second large bowl, whisk together the egg yolks, milk, and vanilla. Whisk in the flour and salt just until incorporated (some lumps are OK). Gently fold the egg white mixture into the yolk mixture (again, some lumps are OK).
  2. To a 10-inch nonstick skillet over medium-low heat, add half the clarified butter. When the butter is hot, pour the batter into the pan and cook until the bottom is golden-brown, about 4 minutes. Using a spatula, cut the pancake into fours. Flip the pieces and drizzle the remaining clarified butter around the outer edges of the pancake; cook until the bottom is golden-brown, about 4 minutes. Use the spatula to cut the pancake into shaggy bite-size pieces. Transfer to a large plate and dust with powdered sugar. Serve hot, with fruit compote if desired.

We’re all familiar with orange-colored carrots, but the root vegetables actually come in all different gorgeous hues, from white and yellow to magenta and purple. And few vegetable dishes bring me more joy to look at—and of course, to eat—than a rainbow of long petite carrots, their green fringes mostly trimmed but with an inch or so still attached. It’s a beautiful way to present the vegetable. 

After roasting the carrots, which brings out their natural sweetness, sprinkle them with chopped pistachios for a sweet, earthy crunch. Serve the dish alongside a bright, herby labneh-based sauce, and you might forget every other dish on the table.

This recipe will work with any carrots, even the larger ones—just trim them down into strips and ensure they’re all similar in size for even roasting.

Yield: 6
Time: 45 minutes
  • 1½ lb. rainbow carrots, leafy tops trimmed, cleaned
  • 3 Tbsp. olive oil
  • 2 tsp. ground cumin
  • 2 tsp. kosher salt, divided
  • 1 tsp. freshly ground black pepper
  • 12 oz. labneh, or plain full-fat Greek yogurt
  • 1 cup coarsely chopped cilantro
  • 1 cup coarsely chopped parsley leaves
  • ¼ cup fresh lemon juice, plus more
  • 1 small garlic clove, finely chopped
  • ¼ cup roasted salted shelled pistachios, coarsely chopped

Instructions

  1. Position a rack in the center of the oven and preheat to 400ºF. Line a large rimmed baking sheet with foil, then place the carrots on top and add the oil, cumin, 1 teaspoon salt, and the black pepper; toss to coat. Bake until the carrots are browned in spots and tender when pierced with a knife, 25–30 minutes.
  2. Meanwhile, in a blender, purée the labneh, cilantro, parsley, lemon juice, garlic, and remaining salt. Season to taste with additional lemon juice.
  3. To serve, spread the labneh sauce over a large platter. Arrange the carrots over the sauce, sprinkle with pistachios, and serve warm.

This kale pesto recipe leans on all-season pantry basics and a little bit of time. It’s one of the ways I make sure my young daughter gets plenty of green vegetables and her favorite pasta in one go.

Time: 30 minutes
  • 1 bunch lacinato kale, stems removed, leaves washed
  • ½ cup grated Parmigiano-Reggiano, divided
  • ⅓ cup extra-virgin olive oil, plus more as needed
  • ¼ cup packed basil leaves
  • 3 anchovy fillets
  • 1 Tbsp. fresh lemon juice
  • 1 garlic clove, peeled
  • Kosher salt and freshly ground black pepper
  • 2 Tbsp. Calabrian chile paste (optional)
  • 1 lb. dried rigatoni or other short pasta

Instructions

  1. Fill a medium bowl halfway with ice water and set aside. Set a colander in the sink.
  2. Fill a medium pot halfway with water and bring to a boil. Add the kale leaves and cook, stirring occasionally, until wilted and tender, about 2 minutes. Using tongs, transfer the kale to the ice water bath, reserving the cooking liquid in the pot. Once completely cold, strain the kale through the colander, then transfer the leaves to a blender. Add the Parmesan, olive oil, basil, anchovies, lemon juice, and garlic. Blend on high until the sauce is smooth and silky, adding more olive oil, a tablespoon at a time, if needed. Stir in the chile paste (if using), season with salt and black pepper to taste, then set aside.
  3. Season the kale-cooking liquid generously with salt, then bring to a boil over high heat. Add the pasta and cook, stirring occasionally, until al dente, about 8 minutes. Drain the pasta, discarding the cooking liquid, then return the pasta to the pot. Scrape the reserved kale pesto into the pasta and toss well to coat. Serve warm or at room temperature.

Kale can be polarizing. Some sneak the antioxidant- and nutrient-rich leafy greens into everything from salads and smoothies to skincare. Others find the cruciferous vegetable overly bitter, too tough, a health food cliché. I think the haters should give kale another chance.

Beautiful lacinato kale is a special treat: Nutty, earthy, and slightly sweet, this variety—also known as Tuscan, black, or dinosaur kale or cavolo nero—has comparatively thin leaves, making it perfect for raw preparations. Curly kale is heartier, with a bit more chew; it lends itself well to a little extra time on the stove, turning tender and silky while still holding its shape in slow-simmered soups and stews. When oiled, salted, and oven-roasted, these ruffled leaves bake up to crispy, snackable chips you can feel good about eating by the handful.

Kale is technically “in-season” in the spring and fall, though it is cold-hardy and can be easily found at farmers markets and grocery stores throughout the year. To help fresh kale last in the fridge, a bit of light prep is in order when you’re unpacking your groceries: Wash and dry the greens well in a salad spinner, then strip the leaves from the stems. Chop the stems crosswise and store in an airtight container, then wrap the leaves loosely in a dry tea towel and slip the bunch into a plastic bag. Stir-fries, bakes, soups—just about any weeknight meal—can all benefit from a handful of this wholesome ingredient. Here are some of our favorite kale recipes from the archives.

Whether you’re scrambling to put together a deskside lunch, or wondering what to serve your vegetarian friends for dinner, a simple grain our couscous kale salad is a no-brainer. In this simple version, toasty almonds, crunchy breadcrumbs, mild vinegar, and plenty of chewy halloumi make it easy to enjoy a generous serving of leafy greens. Pearled couscous (also known as Israeli couscous) is larger than the more common Moroccan type. If you prefer, swap it out for farro, brown rice, or any other whole grain. Mutti makes an excellent tomato vinegar; find it online or substitute a good-quality sherry vinegar.

Time: 30 minutes
  • 1 cup dried pearled couscous
  • 8 oz. halloumi cheese, cut into ½-in. pieces (1¼ cups)
  • ¼ cup coarsely chopped roasted almonds
  • ½ cup Italian breadcrumbs
  • ½ cup za’atar
  • ½ cup tomato vinegar
  • ½ cup olive oil, divided
  • ½ tsp. kosher salt
  • 1 large bunch lacinato kale, stems removed, leaves washed, dried, and finely chopped.

Instructions

  1. In a small pot set over medium heat, bring 1½ cups of water to a boil. Stir in the couscous, then turn the heat down to maintain a simmer, cover, and cook, stirring occasionally, until the couscous is tender and the water has almost fully absorbed, about 8 minutes. Remove from heat, fluff with a fork, and set aside.
  2. To a small skillet over low heat, add 2 tablespoons of the olive oil, the breadcrumbs, and the za’atar. Cook, stirring frequently, until the crumbs are golden brown, fragrant, and toasty, about 7 minutes. Transfer to a small bowl and set aside. Return the skillet to the stove and set over medium-high heat. Line a large plate with paper towels and set it by the stove. Add 1 tablespoon of olive oil, and, working in batches to avoid crowding the pan, add the halloumi, and cook, turning occasionally, until the cheese is lightly browned all over, about 5 minutes per batch. Using a slotted spoon, transfer the halloumi to the lined plate.
  3. In a large bowl, whisk together the vinegar, salt, and the remaining olive oil. Add the kale, toss well to coat, then, using your hands, lightly massage the dressing into the greens to soften. Toss in the almonds, and the reserved couscous and halloumi. Garnish the couscous kale salad with the reserved breadcrumbs and serve at room temperature.
